(Our Play on Tomato Manchego Pasta)

Ingredients
- 1 Red onion (finely diced)
- 3 cloves Garlic
- 400g Tomato passata
- 100g Cream cheese
- 1 tsp Smoked paprika
- 1 tsp Chili flakes
- 1 tsp Sugar
- 200g Penne or Fusilli
Cooking Method
- The Architect Sauté onions and garlic in olive oil until sweet and golden.
- The Bloom Add spices and sugar with a 30ml splash of water to form a dark, bubbling fire-paste.
- The Swell Add passata; simmer for 8 minutes until thickened.
- The Marriage Stir in the cream cheese until it melts; toss with pasta and top with grated manchego.
- The Final Flourish Top with a massive hit of raw fresh parsley matchsticks.
