THE CREAMY RAJAS-STRIPS

Ingredients: 4 Poblano peppers (strips), 1 Large onion (petals), 1 tsp Cumin, 1 tsp Garlic powder, 1 tsp Salt, 150ml Double cream, 50g Feta or Cotija (crumbled), 1 tbsp Butter...

Ingredients

  • 4 Poblano peppers (strips)
  • 1 Large onion (petals)
  • 1 tsp Cumin
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 150ml Double cream
  • 50g Feta or Cotija (crumbled)
  • 1 tbsp Butter

Cooking Method

  1. The Scorch Char peppers over a flame; peel and slice into strips. Fry onions and peppers in butter until blackened.
  2. The Bloom Add spices with a 20ml splash of stock or water; fry until the aromatics are released.
  3. The Marriage Pour in the cream; simmer for 3 minutes until it thickens into a heavy silk that coats the strips.
  4. The Final Flourish Top with crumbled cheese and raw fresh coriander.
