THE CREAMY RAJAS-STRIPS
(Our Play on Rajas con Crema)
Ingredients: 4 Poblano peppers (strips), 1 Large onion (petals), 1 tsp Cumin, 1 tsp Garlic powder, 1 tsp Salt, 150ml Double cream, 50g Feta or Cotija (crumbled), 1 tbsp Butter...

- 4 Poblano peppers (strips)
- 1 Large onion (petals)
- 1 tsp Cumin
- 1 tsp Garlic powder
- 1 tsp Salt
- 150ml Double cream
- 50g Feta or Cotija (crumbled)
- 1 tbsp Butter
Cooking Method
- The Scorch Char peppers over a flame; peel and slice into strips. Fry onions and peppers in butter until blackened.
- The Bloom Add spices with a 20ml splash of stock or water; fry until the aromatics are released.
- The Marriage Pour in the cream; simmer for 3 minutes until it thickens into a heavy silk that coats the strips.
- The Final Flourish Top with crumbled cheese and raw fresh coriander.
