THE CREAMY POD-STRIPS
(Our Play on Rajas with Corn)

- 4 Poblano peppers (charred and stripped)
- 200g Sweetcorn
- 1 White onion (sliced)
- 1 clove Garlic
- 1 tsp Cumin
- 1 tsp Salt
- 150ml Double cream
- 50g Feta crumbles
Cooking Method
- The Scorch Fry the charred pepper strips, corn, and onion in 1 tbsp oil until blackened at the edges.
- The Bloom Add spices and garlic with a 20ml splash of water to form a fragrant steam.
- The Marriage Pour in the cream; simmer for 3 minutes until it thickens into a heavy silk that lacquers the veg.
- The Final Flourish Top with crumbled cheese and raw fresh coriander matchsticks.
