THE CREAMY POD-STRIPS

Ingredients: 4 Poblano peppers (charred and stripped), 200g Sweetcorn, 1 White onion (sliced), 1 clove Garlic, 1 tsp Cumin, 1 tsp Salt, 150ml Double cream, 50g Feta crumbles...

  • 4 Poblano peppers (charred and stripped)
  • 200g Sweetcorn
  • 1 White onion (sliced)
  • 1 clove Garlic
  • 1 tsp Cumin
  • 1 tsp Salt
  • 150ml Double cream
  • 50g Feta crumbles

Cooking Method

  1. The Scorch Fry the charred pepper strips, corn, and onion in 1 tbsp oil until blackened at the edges.
  2. The Bloom Add spices and garlic with a 20ml splash of water to form a fragrant steam.
  3. The Marriage Pour in the cream; simmer for 3 minutes until it thickens into a heavy silk that lacquers the veg.
  4. The Final Flourish Top with crumbled cheese and raw fresh coriander matchsticks.
