THE CREAMY CHEESE-GARDEN
(Our Play on Calabacitas / Zucchini with Corn)
Ingredients: 3 Zucchini (diced), 200g Sweetcorn, 1 Onion (diced), 2 cloves Garlic, 1 tsp Cumin, 0.5 tsp Chili powder, 1 tsp Salt, 100ml Double cream, 100g Monterey Jack (grated)...

- 3 Zucchini (diced)
- 200g Sweetcorn
- 1 Onion (diced)
- 2 cloves Garlic
- 1 tsp Cumin
- 0.5 tsp Chili powder
- 1 tsp Salt
- 100ml Double cream
- 100g Monterey Jack (grated)
Cooking Method
- The Architect Sauté onion and garlic until soft; add zucchini and corn.
- The Scorch Fry on high heat until the zucchini has charred brown spots.
- The Bloom Add spices with a 20ml splash of water to form a fragrant steam that coats the veg.
- The Marriage Pour in the cream and cheese; stir for 2 minutes until it forms a thick, molten silk.
- The Final Flourish Garnish with fresh raw coriander and a dusting of black pepper.
