THE CREAMY ALMOND-HUG
(Our Play on Lamb Pasanda)
Ingredients: 600g Lamb leg (sliced into flat steaks/medallions), 150g Greek yogurt, 50g Ground almonds, 50ml Double cream, 1 tsp Cardamom powder, 1 tsp Turmeric, 1 tsp Cinnamon, 1 Large onion (finely diced), 50g Butter...
Ingredients
- 600g Lamb leg (sliced into flat steaks/medallions)
- 150g Greek yogurt
- 50g Ground almonds
- 50ml Double cream
- 1 tsp Cardamom powder
- 1 tsp Turmeric
- 1 tsp Cinnamon
- 1 Large onion (finely diced)
- 50g Butter
Cooking Method
- The Architect Gently sauté onions in butter until soft and golden.
- The Bloom Add dry spices and a splash of water; stir until fragrant.
- The Sear Add lamb steaks; sear briefly to coat in spices.
- The Silk Merge Stir in yogurt and almonds; simmer low for 30 minutes until lamb is tender.
- The Finish Stir in cream and garnish with toasted almond slivers.
