  • 200g Potato (mashed)
  • 100g Paneer (grated)
  • 20g Cornflour
  • 1 tsp Turmeric
  • 1 tsp Garam masala
  • 200g Tomato passata
  • 100ml Double cream
  • 50g Cashew paste

Cooking Method

  1. The Build Mix potato, paneer, and spices; shape into balls and fry until golden.
  2. The Architect Sauté finely diced onions until golden brown; do not rush this architect.
  3. The Bloom Add the spices and a splash of water to form a smooth, fragrant paste.
  4. The Simmer Add the passata and cashew paste; bubble for 5 minutes then stir in the cream.
  5. The Finish Place koftas in the sauce and garnish with a drizzle of cream and coriander.
