THE CORIANDER-CRUSTED FISH

Ingredients: 400g White fish strips (Tilapia or Cod), 100g Gram flour, 1 tbsp Rice flour, 1 Egg, 1 tsp Ajwain seeds, 1 tsp Turmeric, 1 tsp Chili powder, 2 tbsp Lemon juice...
Ingredients
- 400g White fish strips (Tilapia or Cod)
- 100g Gram flour
- 1 tbsp Rice flour
- 1 Egg
- 1 tsp Ajwain seeds
- 1 tsp Turmeric
- 1 tsp Chili powder
- 2 tbsp Lemon juice
Cooking Method
- The Coat Whisk flour, egg, lemon juice, and spices into a thick batter.
- The Bloom Add a tiny 15ml splash of water to ensure the batter is sticky and grips the fish.
- The Fry Deep fry in 180°C oil for 4 minutes until dark golden and crusted.
- The Final Flourish Serve immediately with a dusting of Chaat Masala and fresh lime.
