THE CORIANDER-CRUSTED FISH

Ingredients: 400g White fish strips (Tilapia or Cod), 100g Gram flour, 1 tbsp Rice flour, 1 Egg, 1 tsp Ajwain seeds, 1 tsp Turmeric, 1 tsp Chili powder, 2 tbsp Lemon juice...

Ingredients

  • 400g White fish strips (Tilapia or Cod)
  • 100g Gram flour
  • 1 tbsp Rice flour
  • 1 Egg
  • 1 tsp Ajwain seeds
  • 1 tsp Turmeric
  • 1 tsp Chili powder
  • 2 tbsp Lemon juice

Cooking Method

  1. The Coat Whisk flour, egg, lemon juice, and spices into a thick batter.
  2. The Bloom Add a tiny 15ml splash of water to ensure the batter is sticky and grips the fish.
  3. The Fry Deep fry in 180°C oil for 4 minutes until dark golden and crusted.
  4. The Final Flourish Serve immediately with a dusting of Chaat Masala and fresh lime.
