Ingredients

  • 400g King prawns (raw, cleaned, and diced)
  • 1 Red onion (finely diced)
  • 1 Cucumber (diced)
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 0.5 tsp Chili flakes
  • 150ml Lime juice
  • 50ml Orange juice
  • 1 tbsp Olive oil

Cooking Method

  1. The Bloom Whisk the lime and orange juice with the salt and pepper; the acid will prime the spices.
  2. The Marriage Submerge the prawns in the citrus silk; let sit for 15 minutes until the protein turns opaque (cooked by acid).
  3. The Mix Fold in the onions, cucumber, and olive oil.
  4. The Final Flourish Top with raw fresh coriander and avocado chunks; serve ice-cold.
