Ingredients
- 400g King prawns (raw, cleaned, and diced)
- 1 Red onion (finely diced)
- 1 Cucumber (diced)
- 1 tsp Salt
- 1 tsp Black pepper
- 0.5 tsp Chili flakes
- 150ml Lime juice
- 50ml Orange juice
- 1 tbsp Olive oil
Cooking Method
- The Bloom Whisk the lime and orange juice with the salt and pepper; the acid will prime the spices.
- The Marriage Submerge the prawns in the citrus silk; let sit for 15 minutes until the protein turns opaque (cooked by acid).
- The Mix Fold in the onions, cucumber, and olive oil.
- The Final Flourish Top with raw fresh coriander and avocado chunks; serve ice-cold.
