Ingredients: 400ml Coconut milk, 200ml Water, 1 tbsp Red curry paste, 1 Lemongrass stalk, 300g King prawns, 100g Mushrooms (sliced)...

  • 400ml Coconut milk
  • 200ml Water
  • 1 tbsp Red curry paste
  • 1 Lemongrass stalk
  • 300g King prawns
  • 100g Mushrooms (sliced)

Cooking Method

  1. The Boil Bring water, coconut milk, and aromatics to a boil.
  2. The Bloom Add the curry paste with a tiny splash of water to ensure it dissolves instantly.
  3. The Swell Add prawns and mushrooms; simmer for 5 minutes until prawns are pink.
  4. The Final Flourish Finish with a squeeze of lime and fresh basil leaves.
