- 400ml Coconut milk
- 200ml Water
- 1 tbsp Red curry paste
- 1 Lemongrass stalk
- 300g King prawns
- 100g Mushrooms (sliced)
Cooking Method
- The Boil Bring water, coconut milk, and aromatics to a boil.
- The Bloom Add the curry paste with a tiny splash of water to ensure it dissolves instantly.
- The Swell Add prawns and mushrooms; simmer for 5 minutes until prawns are pink.
- The Final Flourish Finish with a squeeze of lime and fresh basil leaves.
