THE COCONUT HEAT-STRIKE
(Our Play on Chicken Madras)
Ingredients: 500g Chicken thighs (chunks), 1 Large onion (finely diced), 2 tbsp Oil, 2 tsp Chili powder, 1 tsp Turmeric, 1 tsp Cumin seeds, 200ml Coconut milk, 1 tbsp Tomato purée...
Ingredients
- 500g Chicken thighs (chunks)
- 1 Large onion (finely diced)
- 2 tbsp Oil
- 2 tsp Chili powder
- 1 tsp Turmeric
- 1 tsp Cumin seeds
- 200ml Coconut milk
- 1 tbsp Tomato purée
Cooking Method
- The Temper Sizzle cumin seeds in oil until they pop.
- The Architect Add onions and sauté until dark golden brown.
- The Bloom Add chili and turmeric with a 30ml splash of water; fry until it forms a dark, oily paste.
- The Simmer Add chicken, tomato purée, and coconut milk; simmer for 15 minutes.
- The Finish Garnish with fresh curry leaves for a sharp hit of aromatics.
