THE COCONUT GALANGAL SWELL

- 400ml Coconut milk
- 200ml Chicken stock
- 30g Fresh Galangal (or Ginger) sliced
- 1 Lemongrass stalk
- 2 Green chilies
- 300g Chicken breast (thin strips)
- 100g Mushrooms (sliced)
Cooking Method
- The Boil Bring stock and aromatics to a boil; simmer for 5 minutes to extract the perfume.
- The Bloom Add a tiny 20ml splash of fish sauce to the boiling stock.
- The Swell Pour in coconut milk; add chicken and mushrooms. Simmer for 8 minutes.
- The Final Flourish Finish with a squeeze of lime and fresh coriander.
