THE COCONUT GALANGAL SWELL

Ingredients: 400ml Coconut milk, 200ml Chicken stock, 30g Fresh Galangal (or Ginger) sliced, 1 Lemongrass stalk, 2 Green chilies, 300g Chicken breast (thin strips), 100g Mushrooms (sliced)...

Ingredients

  • 400ml Coconut milk
  • 200ml Chicken stock
  • 30g Fresh Galangal (or Ginger) sliced
  • 1 Lemongrass stalk
  • 2 Green chilies
  • 300g Chicken breast (thin strips)
  • 100g Mushrooms (sliced)

Cooking Method

  1. The Boil Bring stock and aromatics to a boil; simmer for 5 minutes to extract the perfume.
  2. The Bloom Add a tiny 20ml splash of fish sauce to the boiling stock.
  3. The Swell Pour in coconut milk; add chicken and mushrooms. Simmer for 8 minutes.
  4. The Final Flourish Finish with a squeeze of lime and fresh coriander.
