THE COCOA-LACQUER RIBS
(Our Play on Balkan BBQ Ribs with a Mole Twist)
Ingredients: 1kg Pork ribs, 1 tbsp Cocoa powder, 1 tbsp Smoked paprika, 1 tsp Chili flakes, 100ml Dark Beer, 2 tbsp Honey, 2 tbsp Red wine vinegar, 4 cloves Garlic (minced), 1 tsp Cumin...
Ingredients
- 1kg Pork ribs
- 1 tbsp Cocoa powder
- 1 tbsp Smoked paprika
- 1 tsp Chili flakes
- 100ml Dark Beer
- 2 tbsp Honey
- 2 tbsp Red wine vinegar
- 4 cloves Garlic (minced)
- 1 tsp Cumin
Cooking Method
- The Scorch Roast ribs at 200°C for 30 minutes until browned.
- The Bloom Whisk beer, cocoa, honey, vinegar, and spices with a 20ml splash of water; boil for 2 minutes to release the perfume.
- The Marriage Paint the ribs heavily with the cocoa-silk; return to oven at 220°C.
- The Scorch Merge Baste every 5 minutes until the ribs are blackened, sticky, and smell of dark smoke.
- The Final Flourish Finish with a dusting of raw sea salt and fresh raw coriander.
