- 150g Arborio rice
- 400ml Coconut milk
- 400ml Whole milk
- 100g Sugar
- 1 tsp Cardamom
- 1 Lemongrass stalk (bruised)
- 1 tsp Vanilla
Cooking Method
- The Swell Boil rice in water for 10 minutes; drain.
- The Bloom Heat both milks with lemongrass and cardamom; the heat will release the citrus oils.
- The Simmer Add rice and sugar; cook until thick and creamy.
- The Silk Merge Remove lemongrass; stir in vanilla off the heat until it forms a glossy ivory silk.
- The Final Flourish Top with raw toasted coconut and lime zest.
