(Our Play on Squid Ghee Roast)
Ingredients: 400g Squid (rings), 2 tbsp Ghee, 2 tsp Kashmiri chili paste, 1 tsp Black pepper, 1 tsp Turmeric, 1 tbsp Tamarind paste, 1 tsp Sugar...
Ingredients
- 400g Squid (rings)
- 2 tbsp Ghee
- 2 tsp Kashmiri chili paste
- 1 tsp Black pepper
- 1 tsp Turmeric
- 1 tbsp Tamarind paste
- 1 tsp Sugar
Cooking Method
- The Scorch Heat ghee in a heavy pan; fry squid rings for 2 minutes only, then remove to avoid toughness.
- The Bloom In the same ghee, add chili paste and spices with a splash of water; fry until the red oil separates.
- The Marriage Add tamarind and sugar; toss squid back in until it is stained dark red and glistening.
- The Final Flourish Finish with a handful of fresh curry leaves fried in a drop of ghee.
