THE COASTAL COCONUT SWELL
(Our Play on Goan Fish Curry)
Ingredients: 400g Firm white fish (chunks), 400ml Coconut milk, 1 tsp Turmeric, 1 tsp Cumin powder, 1 tsp Chili powder, 1 tbsp Tamarind paste, 2 Green chilies...

- 400g Firm white fish (chunks)
- 400ml Coconut milk
- 1 tsp Turmeric
- 1 tsp Cumin powder
- 1 tsp Chili powder
- 1 tbsp Tamarind paste
- 2 Green chilies
Cooking Method
- The Base Sauté diced onions until golden; add ginger-garlic paste.
- The Bloom Add spices and a splash of water to form a vibrant, yellow paste.
- The Swell Pour in the coconut milk and tamarind; simmer for 5 minutes until thickened.
- The Marriage Gently place the fish chunks in the sauce; simmer for 5-7 minutes until cooked through.
- The Finish Add a final squeeze of lime and fresh coriander.
