THE CLOVE-STEEPED HUNT GRAINS
(Our Play on Arroz de Coelho / Rabbit Rice)

Ingredients
- 600g Rabbit or Chicken (chunks)
- 300g Carolino rice
- 0.5 tsp Ground Cloves
- 1 tsp Black pepper
- 2 Bay leaves
- 100ml Red Wine
- 800ml Chicken stock
- 1 tbsp Vinegar
Cooking Method
- The Scorch Fry meat chunks in oil until charred and blackened at the edges; remove.
- The Bloom Add cloves, pepper, and bay leaves to the pan with a 30ml splash of wine; the steam will release the woody perfume.
- The Swell Add rice and toast for 1 minute. Pour in stock and remaining wine; return meat.
- The Marriage Simmer covered for 20 minutes until the rice is tender and stained deep purple.
- The Final Flourish Stir in vinegar and top with raw fresh parsley.
