THE CLOVE-STEEPED GRAINS

Ingredients: 200g Semolina, 100g Butter, 100g Walnuts (halves), 1 Cinnamon stick, 4 Cloves, 1 tsp Cardamom, 400ml Water, 200g Sugar, 1 Lemon (peel only)...

  • 200g Semolina
  • 100g Butter
  • 100g Walnuts (halves)
  • 1 Cinnamon stick
  • 4 Cloves
  • 1 tsp Cardamom
  • 400ml Water
  • 200g Sugar
  • 1 Lemon (peel only)

Cooking Method

  1. The Swell Boil water, sugar, cloves, cinnamon, and lemon peel for 10 minutes into a thin syrup.
  2. The Architect Fry semolina and walnuts in butter until they turn deep golden and smell nutty.
  3. The Bloom Add a tiny 20ml splash of the hot syrup to the semolina; the hiss will release the clove oils.
  4. The Marriage Slowly pour in the remaining syrup; stir constantly until the grains swell into a dense, spiced silk.
  5. The Final Flourish Serve warm or cold with a final rain of raw ground cinnamon.
