THE CLOVE-STEEPED GRAINS
(Our Play on Balkan Semolina Halva)

Cooking Method
- The Swell Boil water, sugar, cloves, cinnamon, and lemon peel for 10 minutes into a thin syrup.
- The Architect Fry semolina and walnuts in butter until they turn deep golden and smell nutty.
- The Bloom Add a tiny 20ml splash of the hot syrup to the semolina; the hiss will release the clove oils.
- The Marriage Slowly pour in the remaining syrup; stir constantly until the grains swell into a dense, spiced silk.
- The Final Flourish Serve warm or cold with a final rain of raw ground cinnamon.
