(Our Play on Sopa de Peixe / Fish Broth)

- 400g White fish (chunks)
- 100g Prawns
- 1 small onion (pureed)
- 2 cloves Garlic
- 1 Carrot (minced)
- 1 tsp White pepper
- 1 tsp Saffron strands
- 1L Fish stock
- 2 tbsp Olive oil
- 1 tsp Mint
Cooking Method
- The Architect Fry onion, carrot, and garlic in oil until they form a sweet, jammy foundation.
- The Bloom Add saffron and pepper with a 30ml splash of stock; the heat will swell the golden oils.
- The Swell Add remaining stock; simmer for 10 minutes.
- The Marriage Gently slide in the fish and prawns; simmer for 5 minutes until tender.
- The Final Flourish Finish with a massive hit of raw fresh mint and a squeeze of raw lemon.
