Ingredients
- 1L Chicken stock
- 2 tbsp Fish sauce
- 1 Star anise
- 1 Cinnamon stick
- 20g Fresh ginger (charred)
- 300g Chicken breast (poached and shredded)
- 200g Rice noodles (boiled)
Cooking Method
- The Scorch Briefly toast the ginger and whole spices in a dry pot until they smell fragrant.
- The Bloom Add a 20ml splash of water to 'hiss' the pot before adding the stock.
- The Swell Add stock and fish sauce; simmer for 15 minutes to extract the aromatic perfume.
- The Assembly Place noodles and shredded chicken in a bowl; pour the boiling mist over the top.
- The Final Flourish Finish with fresh mint, basil, and a squeeze of lime.
