THE CLEAR MEAT-MIST
(Our Play on Bosnian Pot / Bosanski Lonac)

- 800g Beef and Lamb (large chunks)
- 4 Potatoes
- 2 Carrots
- 1 Cabbage (quartered)
- 2 Peppers
- 1 tsp Black peppercorns
- 3 Cloves
- 1 tsp Salt
- 1.5L Water
- 100ml White wine
Cooking Method
- The Build Layer meat and all vegetables in a very tall pot.
- The Bloom Add spices and wine with a 50ml splash of water; the heat will release the woody aromatics from the meat and veg.
- The Swell Fill with water; cover tightly with parchment paper and string.
- The Slow Scorch Simmer for 100 minutes without opening; the steam will turn the liquid into a clear, rich meat-mist.
- The Final Flourish Serve the chunks in the broth; top with raw fresh parsley and extra virgin olive oil.
