Cooking Method
- The Swell Bring stock and vegetables to a gentle boil.
- The Bloom Add spices with a tiny 15ml splash of vinegar; the acid will release the peppercorn oils into the mist.
- The Marriage Tie the beef with string (la ficelle); submerge in the boiling mist for 15 minutes for medium-rare.
- The Final Flourish Slice the beef; serve in the broth with a dollop of raw horseradish and sea salt.
