(Our Play on Quick Beef Pho)
Ingredients: 1L Beef stock, 2 tbsp Fish sauce, 1 Star anise, 1 Cinnamon stick, 3 Cloves, 20g Fresh ginger (sliced), 250g Sirloin beef (paper-thin slices), 200g Thin rice noodles (boiled)...

- 1L Beef stock
- 2 tbsp Fish sauce
- 1 Star anise
- 1 Cinnamon stick
- 3 Cloves
- 20g Fresh ginger (sliced)
- 250g Sirloin beef (paper-thin slices)
- 200g Thin rice noodles (boiled)
Cooking Method
- The Scorch Dry-toast the whole spices and ginger in a pot for 2 minutes until fragrant.
- The Bloom Add a tiny splash of water to sizzle the aromatics before pouring in the stock.
- The Swell Simmer the stock for 15 minutes; remove spices.
- The Assembly Divide noodles into bowls; top with raw beef slices.
- The Finish Pour boiling stock over the beef; it will cook instantly in the bowl. Top with mint and lime.
