Ingredients: 500g Firm white fish (Snapper or Cod), 200g Prawns, 2 Leeks (sliced), 2 Carrots (rounds), 2 Celery stalks, 1 tsp Saffron strands, 1 tsp White pepper, 1 tsp Salt, 1.2L Fish stock, 2 Egg yolks...

Ingredients

  • 500g Firm white fish (Snapper or Cod)
  • 200g Prawns
  • 2 Leeks (sliced)
  • 2 Carrots (rounds)
  • 2 Celery stalks
  • 1 tsp Saffron strands
  • 1 tsp White pepper
  • 1 tsp Salt
  • 1.2L Fish stock
  • 2 Egg yolks
  • 2 Lemons (juiced)

Cooking Method

  1. The Architect Sauté leeks and carrots in olive oil until soft and translucent.
  2. The Bloom Add saffron and pepper with a 30ml splash of stock; the heat will release the golden oils.
  3. The Swell Add remaining stock; simmer for 10 minutes. Gently poach the fish and prawns for 5 minutes.
  4. The Silk Merge Whisk yolks and lemon juice; slowly temper with a cup of hot broth then stir back into the pot off the heat until a thick ivory mist forms.
  5. The Final Flourish Top with raw fresh dill and extra virgin olive oil.
