THE CITRUS-PORK SWELL

Ingredients: 800g Pork shoulder (cubed), 3 tbsp Achiote paste, 1 tsp Cumin, 1 tsp Dried Oregano, 200ml Orange juice, 100ml Lime juice, 2 tbsp Apple cider vinegar, 2 Red onions (sliced)...

Ingredients

  • 800g Pork shoulder (cubed)
  • 3 tbsp Achiote paste
  • 1 tsp Cumin
  • 1 tsp Dried Oregano
  • 200ml Orange juice
  • 100ml Lime juice
  • 2 tbsp Apple cider vinegar
  • 2 Red onions (sliced)

Cooking Method

  1. The Coat Whisk achiote and spices with 50ml of the orange juice; rub heavily into the pork.
  2. The Bloom Add a tiny 20ml splash of water to the pan to release the aromatic oils before adding the rest of the juices.
  3. The Swell Place pork and juices in a heavy pot; cover and simmer for 50 minutes until the meat is meltingly tender.
  4. The Marriage Shred the pork; toss in the remaining citrus silk until glossy.
  5. The Final Flourish Serve with raw pickled red onions and fresh habanero slices.
