THE CITRUS-PORK SWELL

Ingredients: 800g Pork shoulder (cubed), 3 tbsp Achiote paste, 1 tsp Cumin, 1 tsp Dried Oregano, 200ml Orange juice, 100ml Lime juice, 2 tbsp Apple cider vinegar, 2 Red onions (sliced)...
Ingredients
- 800g Pork shoulder (cubed)
- 3 tbsp Achiote paste
- 1 tsp Cumin
- 1 tsp Dried Oregano
- 200ml Orange juice
- 100ml Lime juice
- 2 tbsp Apple cider vinegar
- 2 Red onions (sliced)
Cooking Method
- The Coat Whisk achiote and spices with 50ml of the orange juice; rub heavily into the pork.
- The Bloom Add a tiny 20ml splash of water to the pan to release the aromatic oils before adding the rest of the juices.
- The Swell Place pork and juices in a heavy pot; cover and simmer for 50 minutes until the meat is meltingly tender.
- The Marriage Shred the pork; toss in the remaining citrus silk until glossy.
- The Final Flourish Serve with raw pickled red onions and fresh habanero slices.
