THE CITRUS-GARLIC SLABS

Ingredients: 400g Pork loin (medallions), 2 cloves Garlic (minced), 1 small red onion (minced), 1 tsp Black pepper, 0.5 tsp Turmeric, 100ml Orange juice, 50g Butter, 1 tbsp Honey...

  • 400g Pork loin (medallions)
  • 2 cloves Garlic (minced)
  • 1 small red onion (minced)
  • 1 tsp Black pepper
  • 0.5 tsp Turmeric
  • 100ml Orange juice
  • 50g Butter
  • 1 tbsp Honey

Cooking Method

  1. The Scorch Sear pork in oil on max heat until charred and golden; remove.
  2. The Architect Sauté onion and garlic in butter until soft.
  3. The Bloom Add spices and honey with a 20ml splash of orange juice; the steam will release the golden oils.
  4. The Swell Add remaining juice; boil until reduced to a thick, zesty lacquer. Return pork.
  5. The Final Flourish Top with raw orange zest and fresh raw mint.
