THE CITRUS-GARLIC SLABS
(Our Play on Pork with Orange / Porco com Laranja)
Ingredients: 400g Pork loin (medallions), 2 cloves Garlic (minced), 1 small red onion (minced), 1 tsp Black pepper, 0.5 tsp Turmeric, 100ml Orange juice, 50g Butter, 1 tbsp Honey...

- 2 cloves Garlic (minced)
- 1 small red onion (minced)
- 1 tsp Black pepper
- 0.5 tsp Turmeric
- 100ml Orange juice
- 50g Butter
- 1 tbsp Honey
Cooking Method
- The Scorch Sear pork in oil on max heat until charred and golden; remove.
- The Architect Sauté onion and garlic in butter until soft.
- The Bloom Add spices and honey with a 20ml splash of orange juice; the steam will release the golden oils.
- The Swell Add remaining juice; boil until reduced to a thick, zesty lacquer. Return pork.
- The Final Flourish Top with raw orange zest and fresh raw mint.
