THE CITRUS-FLAME CREPES
(Our Play on Crêpes Suzette)
Ingredients: 4 Pre-made sweet crepes, 100g Butter, 50g Sugar, 2 Oranges (juiced and zested), 1 tsp Cinnamon, 0.5 tsp Ginger powder, 50ml Grand Marnier or Brandy...

- 1 tsp Cinnamon
- 0.5 tsp Ginger powder
- 50ml Grand Marnier or Brandy
Cooking Method
- The Architect Melt butter and sugar in a wide pan until it bubbles and turns a light amber gold.
- The Bloom Add spices and orange zest with a 30ml splash of orange juice; the steam will release the citrus and spice oils.
- The Swell Add the remaining juice; simmer until it reduces to a thick orange silk.
- The Marriage Fold crepes into triangles and place in the silk; drench until soft.
- The Scorch Pour the alcohol over the crepes and carefully ignite; let the flames char the sugar-silk.
- The Final Flourish Serve immediately with raw orange zest.
