THE CITRUS-ANISE SHANK
(Our Play on Braised Beef Shank with Orange)
Ingredients: 2 Beef shanks (thick cut), 2 Red onions (pureed), 2 cloves Garlic, 1 tsp Star Anise (crushed), 1 tsp Black pepper, 1 tsp Cinnamon, 300ml Red wine, 200ml Orange juice, 1 tbsp Honey...

- 2 Beef shanks (thick cut)
- 2 Red onions (pureed)
- 2 cloves Garlic
- 1 tsp Star Anise (crushed)
- 1 tsp Black pepper
- 1 tsp Cinnamon
- 300ml Red wine
- 200ml Orange juice
- 1 tbsp Honey
Cooking Method
- The Scorch Sear shanks on maximum heat until a dark, charred mahogany crust forms; remove.
- The Architect Fry onion puree in the fat until it turns into a dark, sweet jam.
- The Bloom Add garlic and spices with a 40ml splash of wine; the steam will release the warming perfume.
- The Swell Add remaining wine, juice, and honey; return beef. Simmer covered for 50 minutes until melting.
- The Final Flourish Top with raw fresh orange zest and raw ginger matchsticks.
