THE CINNAMON SUGAR-SWELL

Ingredients: 200g Long-grain rice, 1L Whole milk, 150g Sugar, 2 Cinnamon sticks, 3 Cloves, 1 tsp Vanilla extract, Ground cinnamon, Raisins...

  • 200g Long-grain rice
  • 1L Whole milk
  • 150g Sugar
  • 2 Cinnamon sticks
  • 3 Cloves
  • 1 tsp Vanilla extract
  • Ground cinnamon
  • Raisins

Cooking Method

  1. The Swell Simmer rice in water for 10 minutes until half-cooked; drain.
  2. The Bloom Heat milk with cinnamon and cloves; the heat will swell the spice oils.
  3. The Simmer Add rice and sugar; cook on the lowest setting for 20 minutes, stirring constantly until thick and creamy.
  4. The Marriage Stir in vanilla and raisins at the very last second.
  5. The Final Flourish Serve warm with a heavy raw dust of cinnamon.
