THE CINNAMON SUGAR-SWELL

- 200g Long-grain rice
- 1L Whole milk
- 150g Sugar
- 2 Cinnamon sticks
- 3 Cloves
- 1 tsp Vanilla extract
- Ground cinnamon
- Raisins
Cooking Method
- The Swell Simmer rice in water for 10 minutes until half-cooked; drain.
- The Bloom Heat milk with cinnamon and cloves; the heat will swell the spice oils.
- The Simmer Add rice and sugar; cook on the lowest setting for 20 minutes, stirring constantly until thick and creamy.
- The Marriage Stir in vanilla and raisins at the very last second.
- The Final Flourish Serve warm with a heavy raw dust of cinnamon.
