THE CINNAMON ROOT-SILK
(Our Play on Pumpkin Ravioli Sauce)

- 50g Butter
- 1 tsp Cinnamon
- 0.5 tsp Nutmeg
- 1 tsp Black pepper
- 100ml Double cream
- 1 tbsp Sage leaves
Cooking Method
- The Architect Fry onion puree in butter until sweet and golden; add the sage leaves.
- The Bloom Add the spices with a 20ml splash of pasta water to release the warming aromatics.
- The Silk Merge Pour in the cream; simmer for 3 minutes until it reduces to a thick, fragrant velvet.
- The Marriage Toss with pumpkin or cheese ravioli until every parcel is glistening.
- The Final Flourish Top with raw crushed amaretti biscuits or toasted hazelnuts.
