Ingredients
- 400g Sweet potatoes
- 2 Large Apples (both cubed)
- 2 tsp Cinnamon
- 1 tsp Salt
- 50g Butter
- 50ml Warm milk
- 1 tsp Vanilla extract
Cooking Method
- The Boil Boil sweet potatoes and apples in salted water until soft; drain.
- The Bloom Add spices and vanilla to the warm butter with a tiny 10ml splash of milk; the heat will swell the cinnamon oils.
- The Mash Crush the roots and fruit into the spiced butter; slowly whisk in the remaining milk until it forms a thick orange silk.
- The Final Flourish Top with raw chopped walnuts and a final dust of cinnamon.
