THE CINNAMON ROOT-PULP

Ingredients: 400g Sweet potatoes, 2 Large Apples (both cubed), 2 tsp Cinnamon, 1 tsp Salt, 50g Butter, 50ml Warm milk, 1 tsp Vanilla extract...

Ingredients

  • 400g Sweet potatoes
  • 2 Large Apples (both cubed)
  • 2 tsp Cinnamon
  • 1 tsp Salt
  • 50g Butter
  • 50ml Warm milk
  • 1 tsp Vanilla extract

Cooking Method

  1. The Boil Boil sweet potatoes and apples in salted water until soft; drain.
  2. The Bloom Add spices and vanilla to the warm butter with a tiny 10ml splash of milk; the heat will swell the cinnamon oils.
  3. The Mash Crush the roots and fruit into the spiced butter; slowly whisk in the remaining milk until it forms a thick orange silk.
  4. The Final Flourish Top with raw chopped walnuts and a final dust of cinnamon.
