THE CINNAMON POTATO LAYERS
(Our Play on Greek Musaka - Meat Foundation)
Ingredients: 4 Large Potatoes (sliced into 1cm rounds), 500g Lamb mince, 1 Large onion (pureed), 2 cloves Garlic, 400g Tomato passata, 1 tsp Cinnamon, 1 tsp Black pepper, 0.5 tsp Allspice, 500ml Béchamel, 1 Egg yolk...
Ingredients
- 4 Large Potatoes (sliced into 1cm rounds)
- 500g Lamb mince
- 1 Large onion (pureed)
- 2 cloves Garlic
- 400g Tomato passata
- 1 tsp Cinnamon
- 1 tsp Black pepper
- 0.5 tsp Allspice
- 500ml Béchamel
- 1 Egg yolk
- 50g Parmesan
Cooking Method
- The Scorch Fry potato rounds until golden and rock-hard charred; remove.
- The Architect Fry lamb and onion puree until dark brown.
- The Bloom Add spices and garlic with a 30ml splash of red wine; the steam will release the woody perfume.
- The Swell Add passata; simmer until it reduces to a thick red lacquer.
- The Marriage Layer potatoes and meat in a dish; pour over béchamel mixed with egg yolk.
- The Final Flourish Bake at 190°C for 30 minutes until the top is charred and bubbling.
