- 4 Firm Pears (halved)
- 100ml Port Wine
- 2 tbsp Honey
- 30g Butter
- 1 tsp Cinnamon
- 0.5 tsp Nutmeg
- 1 tsp Vanilla extract
Cooking Method
- The Scorch Place pear halves cut-side down in a pan with butter; fry until dark brown and charred.
- The Bloom Add spices and honey with a 20ml splash of Port; the sudden steam will release the woody perfume.
- The Marriage Pour in the remaining Port; simmer uncovered for 10 minutes until the liquid reduces to a thick purple lacquer.
- The Final Flourish Top with raw fresh orange zest and crushed walnuts.
