THE CINNAMON MILK-SOAK

Ingredients

  • 200g Arborio rice
  • 1L Whole milk
  • 150g Sugar
  • 2 Egg yolks
  • 1 Cinnamon stick
  • 1 Lemon (peel only)
  • Ground Cinnamon
  • Vanilla extract

Cooking Method

  1. The Swell Boil rice in water for 5 minutes; drain.
  2. The Bloom Simmer milk with the cinnamon stick and lemon peel; the heat will release the oils.
  3. The Simmer Add rice and sugar to the milk; cook on very low heat, stirring constantly until thick.
  4. The Silk Merge Whisk yolks with a tiny 10ml splash of warm milk; stir into the rice for 2 minutes to form a yellow silk.
  5. The Final Flourish Remove stick; top with a raw lattice of cinnamon powder.
