THE CINNAMON MILK-SOAK

Ingredients
- 200g Arborio rice
- 1L Whole milk
- 150g Sugar
- 2 Egg yolks
- 1 Cinnamon stick
- 1 Lemon (peel only)
- Ground Cinnamon
- Vanilla extract
Cooking Method
- The Swell Boil rice in water for 5 minutes; drain.
- The Bloom Simmer milk with the cinnamon stick and lemon peel; the heat will release the oils.
- The Simmer Add rice and sugar to the milk; cook on very low heat, stirring constantly until thick.
- The Silk Merge Whisk yolks with a tiny 10ml splash of warm milk; stir into the rice for 2 minutes to form a yellow silk.
- The Final Flourish Remove stick; top with a raw lattice of cinnamon powder.
