Ingredients
- 500ml Whole milk
- 100g Sugar
- 60g Cornflour
- 1 Cinnamon stick
- 1 Lemon (peel only)
- 1 Egg
- 50g Flour
- Oil for frying
Cooking Method
- The Swell Boil milk, sugar, flour, cinnamon stick, and lemon peel until very thick; remove stick and peel.
- The Chill Pour into a flat tray and refrigerate for 4 hours until rock-hard. Cut into squares.
- The Bloom The cinnamon perfume will have penetrated the milk-silk during the slow chill.
- The Coat Dredge milk squares in flour then beaten egg.
- The Scorch Deep fry until dark golden and charred at the edges.
- The Final Flourish Roll immediately in raw cinnamon sugar.
