Ingredients

  • 200g Short-grain rice (Arborio)
  • 1L Whole milk
  • 150g Sugar
  • 3 Egg yolks
  • 2 Cinnamon sticks
  • 1 Lemon (zested)
  • 1 tsp Vanilla extract

Cooking Method

  1. The Swell Boil rice in milk with the cinnamon sticks and lemon zest until milk is 70% absorbed.
  2. The Bloom Whisk yolks and sugar with a tiny 10ml splash of warm milk to release the aromatics.
  3. The Silk Merge Slowly stir the spiced yolks into the pot; cook on very low heat until it forms a thick, creamy silk.
  4. The Marriage Remove cinnamon sticks; stir in vanilla.
  5. The Final Flourish Pour into a dish and create a lattice of raw ground cinnamon over the top.
