- 200g Short-grain rice (Arborio)
- 1L Whole milk
- 150g Sugar
- 3 Egg yolks
- 2 Cinnamon sticks
- 1 Lemon (zested)
- 1 tsp Vanilla extract
Cooking Method
- The Swell Boil rice in milk with the cinnamon sticks and lemon zest until milk is 70% absorbed.
- The Bloom Whisk yolks and sugar with a tiny 10ml splash of warm milk to release the aromatics.
- The Silk Merge Slowly stir the spiced yolks into the pot; cook on very low heat until it forms a thick, creamy silk.
- The Marriage Remove cinnamon sticks; stir in vanilla.
- The Final Flourish Pour into a dish and create a lattice of raw ground cinnamon over the top.
