THE CINNAMON MILK-BLOCKS
(Our Play on Leche Frita / Fried Milk)
Ingredients: 500ml Whole milk, 100g Sugar, 50g Cornflour, 1 Cinnamon stick, 1 tsp Vanilla extract, 1 Egg (whisked), 50g Breadcrumbs, 1 tbsp Ground cinnamon (for dusting)...

- 500ml Whole milk
- 100g Sugar
- 50g Cornflour
- 1 Cinnamon stick
- 1 tsp Vanilla extract
- 1 Egg (whisked)
- 50g Breadcrumbs
- 1 tbsp Ground cinnamon (for dusting)
Cooking Method
- The Swell Whisk cold milk, sugar, and cornflour until smooth; add the cinnamon stick.
- The Bloom Heat while stirring constantly until it turns into a thick, heavy silk.
- The Chill Pour into a tray; refrigerate for 4 hours until rock-hard. Slice into cubes.
- The Scorch Dredge in egg then breadcrumbs; deep fry until dark golden and crispy.
- The Final Flourish Roll the hot blocks in a raw mix of sugar and ground cinnamon.
