THE CINNAMON MILK-BLOCKS

Ingredients: 500ml Whole milk, 100g Sugar, 50g Cornflour, 1 Cinnamon stick, 1 tsp Vanilla extract, 1 Egg (whisked), 50g Breadcrumbs, 1 tbsp Ground cinnamon (for dusting)...

Ingredients

  • 500ml Whole milk
  • 100g Sugar
  • 50g Cornflour
  • 1 Cinnamon stick
  • 1 tsp Vanilla extract
  • 1 Egg (whisked)
  • 50g Breadcrumbs
  • 1 tbsp Ground cinnamon (for dusting)

Cooking Method

  1. The Swell Whisk cold milk, sugar, and cornflour until smooth; add the cinnamon stick.
  2. The Bloom Heat while stirring constantly until it turns into a thick, heavy silk.
  3. The Chill Pour into a tray; refrigerate for 4 hours until rock-hard. Slice into cubes.
  4. The Scorch Dredge in egg then breadcrumbs; deep fry until dark golden and crispy.
  5. The Final Flourish Roll the hot blocks in a raw mix of sugar and ground cinnamon.
