THE CINNAMON FRUIT-FOLD
(Our Play on Balkan Apple Strudel / Pita sa Jabukama)
Ingredients: 4 sheets Phyllo pastry, 100g Butter (melted), 4 Large Apples (grated and squeezed dry), 2 tsp Cinnamon, 1 tsp Vanilla extract, 0.5 tsp Nutmeg, 100g Sugar, 50g Walnuts (crushed)...

- 100g Butter (melted)
- 4 Large Apples (grated and squeezed dry)
- 2 tsp Cinnamon
- 1 tsp Vanilla extract
- 0.5 tsp Nutmeg
- 100g Sugar
- 50g Walnuts (crushed)
Cooking Method
- The Bloom Whisk cinnamon and vanilla with the melted butter and a tiny 5ml splash of warm milk to release the spice oils.
- The Build Mix grated apples with sugar and walnuts. Brush phyllo sheets with spiced butter; layer them.
- The Assembly Spread the apple filling; roll into a tight cylinder.
- The Bake Roast at 200°C for 25 minutes until the pastry is rock-hard golden and charred at the edges.
- The Final Flourish Dust heavily with raw icing sugar and more raw cinnamon.
