THE CINNAMON FRUIT-CRUST
(Our Play on Apple Tarte Tatin - Shortcut)

Ingredients
- 4 Large Apples (peeled and quartered)
- 100g Sugar
- 50g Butter
- 2 tsp Cinnamon
- 0.5 tsp Nutmeg
- 1 tsp Vanilla extract
- 1 sheet Puff Pastry
Cooking Method
- The Scorch Melt sugar and butter in a pan until it turns a dark, charred amber.
- The Bloom Add apples and spices with a tiny 10ml splash of water; the steam will swell the cinnamon oils.
- The Marriage Simmer for 5 minutes until apples are soft. Cover with the puff pastry sheet.
- The Bake Roast at 200°C for 15 minutes until the crust is golden and puffed.
- The Final Flourish Invert while hot; top with a final raw dust of cinnamon.
