THE CINNAMON FRUIT-CRUST

Ingredients: 4 Large Apples (peeled and quartered), 100g Sugar, 50g Butter, 2 tsp Cinnamon, 0.5 tsp Nutmeg, 1 tsp Vanilla extract, 1 sheet Puff Pastry...

Ingredients

  • 4 Large Apples (peeled and quartered)
  • 100g Sugar
  • 50g Butter
  • 2 tsp Cinnamon
  • 0.5 tsp Nutmeg
  • 1 tsp Vanilla extract
  • 1 sheet Puff Pastry

Cooking Method

  1. The Scorch Melt sugar and butter in a pan until it turns a dark, charred amber.
  2. The Bloom Add apples and spices with a tiny 10ml splash of water; the steam will swell the cinnamon oils.
  3. The Marriage Simmer for 5 minutes until apples are soft. Cover with the puff pastry sheet.
  4. The Bake Roast at 200°C for 15 minutes until the crust is golden and puffed.
  5. The Final Flourish Invert while hot; top with a final raw dust of cinnamon.
