- 200g Dark chocolate
- 150g Butter
- 3 Eggs
- 200g Sugar
- 1 tsp Cinnamon
- 0.5 tsp Chili powder
- 1 tsp Salt
- 100g Flour
- 30g Cocoa powder
Cooking Method
- The Melt Whisk butter and chocolate over a water bath until a dark silk forms.
- The Bloom Whisk the spices into the eggs and sugar with a tiny 10ml splash of warm milk to release the perfume.
- The Build Fold the spiced egg mix into the chocolate silk; stir in flour and cocoa.
- The Bake Pour into a dish; bake at 180°C for 25 minutes until the top is cracked and charred gold.
- The Final Flourish Dust with raw cinnamon sugar and serve with raw cream.
