Ingredients: 200g Dark chocolate, 150g Butter, 3 Eggs, 200g Sugar, 1 tsp Cinnamon, 0.5 tsp Chili powder, 1 tsp Salt, 100g Flour, 30g Cocoa powder...

  • 200g Dark chocolate
  • 150g Butter
  • 3 Eggs
  • 200g Sugar
  • 1 tsp Cinnamon
  • 0.5 tsp Chili powder
  • 1 tsp Salt
  • 100g Flour
  • 30g Cocoa powder

Cooking Method

  1. The Melt Whisk butter and chocolate over a water bath until a dark silk forms.
  2. The Bloom Whisk the spices into the eggs and sugar with a tiny 10ml splash of warm milk to release the perfume.
  3. The Build Fold the spiced egg mix into the chocolate silk; stir in flour and cocoa.
  4. The Bake Pour into a dish; bake at 180°C for 25 minutes until the top is cracked and charred gold.
  5. The Final Flourish Dust with raw cinnamon sugar and serve with raw cream.
