THE CINNAMON-CHILE SQUASH
(Our Play on Candied Pumpkin / Calabaza en Tacha)

- 1kg Pumpkin or Butternut squash (large chunks)
- 2 Cinnamon sticks
- 3 Cloves
- 1 tsp Chili flakes
- 200g Brown sugar
- 200ml Water
- 1 Orange (zested)
Cooking Method
- The Swell Bring water and brown sugar to a boil in a heavy pot until a syrup forms.
- The Bloom Add cinnamon, cloves, and chili; simmer for 5 minutes to release the perfume.
- The Marriage Add squash chunks; cover and simmer for 30 minutes until the squash is soft and stained amber.
- The Final Flourish Drizzle with raw honey and top with fresh orange zest.
