THE CINNAMON CHEESE-CLOUDS

Ingredients: 250g Ricotta or Requeijão, 200g Sugar, 2 Eggs, 1 tbsp Cinnamon, 1 tsp Vanilla extract, 50g Flour, 1 Lemon (zested)...

  • 250g Ricotta or Requeijão
  • 200g Sugar
  • 2 Eggs
  • 1 tbsp Cinnamon
  • 1 tsp Vanilla extract
  • 50g Flour
  • 1 Lemon (zested)

Cooking Method

  1. The Bloom Whisk cinnamon and vanilla with a tiny 10ml splash of warm milk to release the aromatics.
  2. The Silk Merge Blitz the cheese, sugar, eggs, and spiced milk until it forms a smooth yellow silk.
  3. The Build Fold in flour and lemon zest; pour into small pastry-lined molds.
  4. The Bake Roast at 190°C for 20 minutes until the tops are charred and the centers are wobbly.
  5. The Final Flourish Top with a final rain of raw ground cinnamon.
