- 200g Sugar
- 2 Eggs
- 1 tbsp Cinnamon
- 1 tsp Vanilla extract
- 50g Flour
- 1 Lemon (zested)
Cooking Method
- The Bloom Whisk cinnamon and vanilla with a tiny 10ml splash of warm milk to release the aromatics.
- The Silk Merge Blitz the cheese, sugar, eggs, and spiced milk until it forms a smooth yellow silk.
- The Build Fold in flour and lemon zest; pour into small pastry-lined molds.
- The Bake Roast at 190°C for 20 minutes until the tops are charred and the centers are wobbly.
- The Final Flourish Top with a final rain of raw ground cinnamon.
