THE CINNAMON BREAD-CLOUD
(Our Play on Pain Perdu / French Toast)

Ingredients
- 4 Thick slices of Brioche or Stale bread
- 200ml Whole milk
- 2 Eggs
- 2 tbsp Sugar
- 2 tsp Cinnamon
- 1 tsp Vanilla extract
- 0.5 tsp Nutmeg
- 50g Butter
Cooking Method
- The Bloom Whisk eggs, milk, and sugar with the spices and a tiny 10ml splash of warm water to release the cinnamon perfume.
- The Swell Soak the bread slices in the spiced silk for 2 minutes until they are heavy and saturated.
- The Scorch Melt butter in a wide pan until foaming; fry bread for 3 minutes per side until dark golden and charred at the edges.
- The Final Flourish Serve with raw honey and a final dust of raw cinnamon.
