THE CINNAMON BEEF-SWELL
(Our Play on Thai Massaman Curry)

- 600g Beef chunks (3cm)
- 400ml Coconut milk
- 2 tbsp Massaman paste
- 1 Large onion (cubed)
- 200g Potatoes (cubed)
- 1 Cinnamon stick
- 2 Star anise
- 30g Roasted peanuts
Cooking Method
- The Scorch Fry the curry paste in oil until the fat separates and the spicy perfume releases.
- The Bloom Add a 30ml splash of coconut milk and the whole spices; stir until the oil turns red.
- The Swell Add beef, potatoes, and the rest of the milk; cover and simmer low for 40 minutes.
- The Marriage Uncover and simmer for 5 minutes until the sauce is oily and thick.
- The Final Flourish Add a final squeeze of lime and the peanuts for a textured finish.
