THE CIDER-LACQUER HUNT
(Our Play on Braised Rabbit with Balkan Herbs)
Ingredients: 800g Rabbit (chunks), 2 Leeks (sliced), 2 cloves Garlic, 200g Mushrooms, 1 tsp Dried Thyme, 1 tsp Black pepper, 2 Bay leaves, 300ml Dry Cider, 50g Butter, 1 tbsp Honey...

- 800g Rabbit (chunks)
- 2 Leeks (sliced)
- 2 cloves Garlic
- 200g Mushrooms
- 1 tsp Dried Thyme
- 1 tsp Black pepper
- 2 Bay leaves
- 300ml Dry Cider
- 50g Butter
- 1 tbsp Honey
Cooking Method
- The Scorch Sear rabbit in oil until charred and golden; remove.
- The Architect Sauté leeks and mushrooms in butter until soft.
- The Bloom Add spices and honey with a 40ml splash of cider; the steam will release the perfume.
- The Swell Add remaining cider; return meat. Simmer covered for 30 minutes until tender.
- The Final Flourish Top with a massive hit of raw fresh parsley matchsticks.
