THE CHORIZO-HONEY HALLOUMI

Ingredients: 250g Halloumi (sliced), 100g Chorizo (diced), 1 tsp Smoked paprika, 1 tsp Chili flakes, 2 tbsp Honey, 1 tbsp Sherry vinegar, Fresh Oregano, Lemon juice...

  • 250g Halloumi (sliced)
  • 100g Chorizo (diced)
  • 1 tsp Smoked paprika
  • 1 tsp Chili flakes
  • 2 tbsp Honey
  • 1 tbsp Sherry vinegar
  • Fresh Oregano
  • Lemon juice

Cooking Method

  1. The Scorch Fry chorizo until the red fat renders; add halloumi and fry on high heat until the cheese edges are rock-hard charred.
  2. The Bloom Whisk honey, vinegar, and spices in a small bowl; add a tiny 5ml splash of the hot chorizo fat to the mix to bloom the paprika.
  3. The Marriage Drizzle the hot red honey-silk over the charred cheese while still in the pan.
  4. The Final Flourish Top with raw fresh oregano and a massive hit of raw lemon.
