THE CHORIZO-HONEY HALLOUMI
(Our Play on Greek Cheese with a Spanish Twist)
Ingredients: 250g Halloumi (sliced), 100g Chorizo (diced), 1 tsp Smoked paprika, 1 tsp Chili flakes, 2 tbsp Honey, 1 tbsp Sherry vinegar, Fresh Oregano, Lemon juice...

- 250g Halloumi (sliced)
- 100g Chorizo (diced)
- 1 tsp Smoked paprika
- 1 tsp Chili flakes
- 2 tbsp Honey
- 1 tbsp Sherry vinegar
- Fresh Oregano
- Lemon juice
Cooking Method
- The Scorch Fry chorizo until the red fat renders; add halloumi and fry on high heat until the cheese edges are rock-hard charred.
- The Bloom Whisk honey, vinegar, and spices in a small bowl; add a tiny 5ml splash of the hot chorizo fat to the mix to bloom the paprika.
- The Marriage Drizzle the hot red honey-silk over the charred cheese while still in the pan.
- The Final Flourish Top with raw fresh oregano and a massive hit of raw lemon.
