THE CHORIZO-ĆEVAPI SLABS
(Our Play on Serbian Ćevapi with Spanish Heat)

- 100g Chorizo (minced)
- 1 tbsp Smoked paprika
- 1 tsp Garlic powder
- 1 tsp Salt
- 2 tbsp Red wine vinegar
- 50ml Sparkling water
- 1 small onion (pureed)
Cooking Method
- The Build Knead meat, chorizo, and onion until tacky.
- The Bloom Fold in sparkling water and vinegar; the reaction will release the smoky pimentón oils.
- The Scorch Form small sausages; grill on white-hot heat until the exterior is a blackened fire-shield.
- The Final Flourish Serve with raw spicy mustard and fresh coriander.
