Ingredients: 500g Pork mince, 100g Chorizo (minced), 1 tbsp Smoked paprika, 1 tsp Garlic powder, 1 tsp Salt, 2 tbsp Red wine vinegar, 50ml Sparkling water, 1 small onion (pureed)...

Ingredients

  • 500g Pork mince
  • 100g Chorizo (minced)
  • 1 tbsp Smoked paprika
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 2 tbsp Red wine vinegar
  • 50ml Sparkling water
  • 1 small onion (pureed)

Cooking Method

  1. The Build Knead meat, chorizo, and onion until tacky.
  2. The Bloom Fold in sparkling water and vinegar; the reaction will release the smoky pimentón oils.
  3. The Scorch Form small sausages; grill on white-hot heat until the exterior is a blackened fire-shield.
  4. The Final Flourish Serve with raw spicy mustard and fresh coriander.
