THE CHOCO-WALNUT ARCHITECTURE

Ingredients
- 5 Egg whites
- 200g Walnuts (finely ground)
- 150g Sugar
- 1 tsp Cardamom
- 1 tsp Vanilla extract
- 200g Dark chocolate (melted)
- 200ml Double cream
Cooking Method
- The Build Whisk egg whites and sugar to stiff peaks; fold in walnuts and cardamom.
- The Scorch Spread into 5 thin circles; roast at 170°C for 6 minutes each until charred at the edges.
- The Bloom Whisk the vanilla into the cream; add a 10ml splash of hot cream to the melted chocolate to release the perfume.
- The Assembly Stack the walnut disks with the chocolate silk between each layer.
- The Final Flourish Cover with the remaining silk; top with raw green coconut shavings (traditionally) or pistachios.
