THE CHIPOTLE-SILK VEG
(Our Play on Zucchini in Smoky Cream)

- 3 Large Zucchini (sliced into rounds)
- 1 tbsp Chipotle paste
- 1 tsp Garlic powder
- 1 tsp Salt
- 100ml Double cream
- 50g Feta crumbles
- 1 Onion (diced)
- 1 tbsp Butter
Cooking Method
- The Architect Sauté onion in butter until sweet and golden.
- The Scorch Add zucchini; fry on high heat until the rounds have charred brown spots.
- The Bloom Add chipotle and spices with a 20ml splash of stock; the steam will release the smoke.
- The Marriage Pour in the cream; simmer for 3 minutes until it thickens into a heavy orange silk.
- The Final Flourish Top with raw feta crumbles and fresh raw mint.
