THE CHIPOTLE RED-ORBS
(Our Play on Meatballs in Chipotle Sauce)

- 500g Beef mince
- 1 Egg
- 2 tbsp Chipotle paste
- 1 tsp Cumin
- 1 tsp Garlic powder
- 1 onion (pureed)
- 400g Tomato passata
- 100ml Chicken stock
Cooking Method
- The Build Knead meat, egg, and half the spices; form into spheres and sear until charred.
- The Architect Fry onion puree in the same pan until sweet and golden.
- The Bloom Add chipotle and remaining spices with a 30ml splash of stock; the steam will release the smoke.
- The Swell Add passata and stock; return meatballs and simmer for 15 minutes until thick.
- The Final Flourish Top with raw fresh coriander and serve with lime wedges.
