Ingredients: 500g Beef mince, 1 Egg, 2 tbsp Chipotle paste, 1 tsp Cumin, 1 tsp Garlic powder, 1 onion (pureed), 400g Tomato passata, 100ml Chicken stock...

Ingredients

  • 500g Beef mince
  • 1 Egg
  • 2 tbsp Chipotle paste
  • 1 tsp Cumin
  • 1 tsp Garlic powder
  • 1 onion (pureed)
  • 400g Tomato passata
  • 100ml Chicken stock

Cooking Method

  1. The Build Knead meat, egg, and half the spices; form into spheres and sear until charred.
  2. The Architect Fry onion puree in the same pan until sweet and golden.
  3. The Bloom Add chipotle and remaining spices with a 30ml splash of stock; the steam will release the smoke.
  4. The Swell Add passata and stock; return meatballs and simmer for 15 minutes until thick.
  5. The Final Flourish Top with raw fresh coriander and serve with lime wedges.
