Ingredients: 800g White beans (canned/rinsed), 4 Large onions (sliced thin), 100ml Sunflower oil, 1 tbsp Chipotle paste, 1 tsp Smoked paprika, 1 tsp Cumin, 1 tbsp Honey, 100ml Veg stock...

Ingredients

  • 800g White beans (canned/rinsed)
  • 4 Large onions (sliced thin)
  • 100ml Sunflower oil
  • 1 tbsp Chipotle paste
  • 1 tsp Smoked paprika
  • 1 tsp Cumin
  • 1 tbsp Honey
  • 100ml Veg stock

Cooking Method

  1. The Architect Fry onions in oil on low heat until they melt into a sweet mahogany jam.
  2. The Bloom Add chipotle and spices with a 30ml splash of stock; the hiss will release the smoky aromatics.
  3. The Marriage Mix beans and onion jam in a tray; drizzle with honey.
  4. The Scorch Roast at 200°C for 20 minutes until the top is rock-hard charred and bubbling.
  5. The Final Flourish Finish with raw fresh coriander and extra raw black pepper.
